Ingredients

8 large eggs
½ cup cottage cheese
creamed

½ cup cream cheese
softened
pinch salt

2 packets sugar substitute
*
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ cup cream
3 tablespoons butter
2 tablespoons sour cream
optional/topping

Directions

Combine all ingredients except butter and sour cream in a bowl.

Beat until smooth.

Melt butter in large nonstick omelet pan or skillet.

Serve plain or top with sour cream.
