Banana, Honey and Walnuts Whole Wheat Bread

Moist, nutty and fluffy, vegetable oil and honey give the bread a tangy taste, also the whole wheat flour and walnuts add some nutty flavor.

Ingredients

cup canola oil
or olive oil, or any vegetable oil
½ cup honey
or as needed
1 ¼ teaspoons vanilla extract
2 large eggs
1 cup bananas
ripe and mashed
1 ¾ cups whole-wheat flour
½ teaspoon salt
1 teaspoon baking soda
¼ cup water
hot, or milk
cup walnuts
coarsely chopped

Directions

Preheat oven to 325℉ (160℃).

Butter and flour a 9 by 5-inch loaf pan and set aside.

Mix together oil and honey in a large bowl until well blended.

Whisk in eggs until well mixed.

Stir in mashed bananas and vanilla until smooth.

Stir in flour and salt until well mixed.

Stir in baking soda to hot water or milk until mix, and then pour into batter, stir well.

Stir in walnuts until evenly distributed. Do not over mix.

Transfer batter into the prepared loaf pan.

Bake for 60 minutes or longer until a wooden stick inserted comes out clean.

Cool on wire rack in pan for about 20 minutes.

Remove from pan and allow to keep cooking on the wire rack for another 10 minutes.

Serve with tea or coffee.
