This year I switched CSAs, to one that was a bit more fruit-heavy (so I thought). It turns out, this CSA share is 75% fruit, leaving me with a whole heck of a lot of peaches. I had saved this recipe for Oven Roasted Peaches from Real Fit Mama, but it turns out that I totally bungled my grocery list, and didn’t have most of the ingredients.

2 peaches, halved with pits removed
4 Tbsp crumbled feta
1 tsp grass-fed butter
1/2 tsp raw honey
pinch of sea salt
Directions
Preheat the oven to 325℉ (160℃) F.
Lay out the 4 peach halves in a glass baking dish .
Add ¼ tsp butter to the crevice, followed by 1 Tbsp feta, and drizzle with ⅛ tsp raw honey.
Add just a pinch of salt to each peach. Bake for 20 minutes.
