90 minThis cake is more apple than cake, which is exactly the point.
Four whole cups of chopped fruit fold into a simple spiced batter along with raisins, creating a dense, moist crumb that stays fresh for days.
The pan gets dusted with sugar instead of flour, giving the edges a subtle sweet crunch.
Bake until the apples soften completely and the top turns golden brown.
Kitchen Tips
- Chop apples into uniform half-inch pieces so they cook evenly and don’t leave raw spots
- Beat the margarine and sugars thoroughly before adding other ingredients for better texture
- Add coconut or nuts to the raisins for extra richness if you want to gild the lily
- Test with a toothpick near the center; it should come out clean when the apples are tender
