Almond Cream Cheese Stuffed French Toast

A truly decadent french toast stuffed with almonds and cream cheese. Talk about kicking it up a notch!

3 pound french bread
wide loaf, un-sliced
4 ounces almonds
dry-roasted, diced
8 ounces cream cheese
½ cup raspberry jam
or preserves
24 large eggs
1 ½ quart milk
1 tablespoons almond extract
1 tablespoon vanilla extract
1 tablespoon cinnamon
1 x butter
1 x maple syrup
1 x powdered sugar


Cut bread into 1-inch slices and cut a pocket into each side.

Combine almonds, cream cheese and preserves and stuff into bread pockets.

Beat together eggs, milk and flavorings.

Soak bread and sauté in butter until browned on both sides.

Serve with maple syrup and a sprinkling of powdered sugar.

Serve 2 to 4 slices per person.

It has been said that breakfast should be eaten like a king since the ancient time, which I totally agree. I have been making all kinds of breakfast recipes recently, from pancakes (American, German, Swedish, etc...) to stuffed French toast.

I have tried to make them healthier by using whole wheat flour, whole grain bread, low-fat milk and egg whites. So far they have all came out delicious.

Made this French toast for breakfast this morning. Instead of raspberry jam, I used blueberry jam, which was delicious with cream cheese and roasted almonds.

The only thing was that the bread wasn't cooked enough in the pan, so the centre part was still a bit wet. Make sure to cook your toast long enough.

Warm, creamy, fruity and nutty. Nobody could resist a breakfast like this, it will make everyone feel happy to get up :)
