15 Minute Greek Garbanzo Bean Salad
This refreshing yet delicious salad is very quick and easy to prepare. It can be kept in the refrigerator for a few days.
Ingredients

chickpeas (garbanzo beans)
drained and rinsed |

scallions, spring or green onions
minced |

garlic cloves

ripe, seeds removed and chopped |

ribs diced about 1/2 inch pieces |

feta cheese
optional |

romaine lettuce
head chopped, outer leaves removed, and discarded |

Directions
Mix all ingredients except lettuce and cheese in a bowl and season with salt and pepper to taste.
Serve on bed of chopped romaine lettuce and sprinkle with feta cheese.

I remember the salad served during my parent's anniversary. It looks certainly like this. We hired caterers from Spits n Pieces and one of their appetizers is this. That was really delicious and I wanted to make it at home. Problem is I don't have the recipe. Thanks for sharing it here.
