This refreshing yet delicious salad is very quick and easy to prepare. It can be kept in the refrigerator for a few days.

Ingredients

15 ounces chickpeas (garbanzo beans)
drained and rinsed
cup scallions, spring or green onions
minced
3 medium garlic cloves
pressed

1 medium tomatoes
ripe, seeds removed and chopped
3 medium celery
ribs diced about 1/2 inch pieces

3 tablespoons lemon juice
fresh
1 x olive oil, extra-virgin
to taste

¼ cup feta cheese
optional
1 small romaine lettuce
head chopped, outer leaves removed, and discarded

1 x salt and black pepper
to taste

Directions

Mix all ingredients except lettuce and cheese in a bowl and season with salt and pepper to taste.

Serve on bed of chopped romaine lettuce and sprinkle with feta cheese.

Like the title says, it is a quick and easy recipe, and I spent less than 15 minutes, the salad came out delicious; tomato gave the juiciness and sweetness, celery added some crunchiness, and the chickpeas brought the protein into the salad, also gave kind of meaty texture and flavor. Definitely recommend this recipe to everyone!

I remember the salad served during my parent's anniversary. It looks certainly like this. We hired caterers from Spits n Pieces and one of their appetizers is this. That was really delicious and I wanted to make it at home. Problem is I don't have the recipe. Thanks for sharing it here.
