25 minThey’re called “vanishing” for a reason. These thick, chewy oatmeal cookies are packed with warm cinnamon, brown sugar, and plump raisins, all held together by a generous three cups of rolled oats.
The dough comes together in minutes. Wet ingredients in one bowl, dry in another, stir, scoop, and bake.
Golden on the edges, soft in the center, and gone before you can say “save me one."
Kitchen Tips
- Don’t overbake. Pull them when the edges are golden but the centers still look slightly underdone. They’ll firm up as they cool.
- For chewier cookies, use all brown sugar instead of the brown and white sugar mix.
- Swap raisins for dried cranberries, chocolate chips, or chopped walnuts if you want to mix things up.
