Vanilla brownies (blondies) made with butter, brown sugar, and vanilla extract with optional chocolate chips. Chewy, buttery bars baked in a sheet pan for easy slicing.

2 hrsThese vanilla brownies are really blondies in disguise: buttery, chewy, and loaded with brown sugar flavor instead of cocoa. The double sugar approach, both white and brown, creates bars with crisp edges and soft, slightly gooey centers.
Vanilla is the star here, not chocolate. That single teaspoon punches through the butter and brown sugar with a warm, fragrant sweetness. Chocolate chips are totally optional, but tossing them in gives you the best of both worlds.
Adding the eggs one at a time matters. It builds structure gradually so you end up with bars that hold together when sliced rather than crumbling apart.
Chef Tips
- Beat the butter and sugars until truly creamy, at least 3 minutes. This aerates the batter and gives you a lighter texture.
- Grease the pan well or line it with parchment. These bars are sticky and will fight you otherwise.
- They’ll look slightly underdone when you pull them from the oven. That’s right. They firm up significantly as they cool, so overbaking is the biggest risk.
- Let them cool completely before cutting. Warm blondies fall apart; room-temperature ones slice cleanly.
Variations
- Fold in white chocolate chips and macadamia nuts for a tropical twist.
- Add butterscotch chips instead of chocolate chips for a full caramel-forward bar.
- Sprinkle flaky sea salt over the top before baking to balance the sweetness.

Directions
Preheat oven to 350℉ (180℃).
In small bowl combine flour, baking powder and salt.
Set aside.
In large bowl beat butter, sugar, brown sugar and vanilla until creamy.
Add eggs, one at a time.
Gradually beat in flour mixture.
Add chips (if desired). Spread evenly into well greased 15 x 10 x 1 baking pan. Bake 350F, 35 to 40 min.
Cool in pan on rack. When completely cool cut into pieces.40

My family loved these brownies! They rose beautifully and looked pretty enough to be a cake. I served them with some bottled Wilton Cookie Icing drizzled on top. :)
