This tortellini salad is easily hearty enough to be your main dish. It comes together quickly with a cream cheese based sauce and ready made fresh tortellini.

Directions

This is one of the best tortellini salad recipes we've found.

  1. Cook the cheese tortellini (or another filling) in boiling, salted water in according to package directions. Meanwhile, prepare the remaining ingredients.

  2. Drain the tortellini in a colander and return the pot to the heat. Add olive oil, onions, garlic and cook for 2 minutes then add the mushrooms. Sauté until the onions are translucent and mushrooms are beginning to lose their moisture.

  3. Add the cream cheese, milk, tomatoes, parmesan cheese and Italian seasoning. Heat, occasionally stirring, to combine until the mixture barely begins to boil. If the mixture seems too thick, add additional milk (many times we need to add 1/4 cup) to loosen the mixture to a thick, sauce-like consistency.

  4. Taste and adjust seasoning with salt and pepper then add the cooked tortellini back into the pot. Stir to coat the tortellini and allow to heat through.

You may wish to add some additional chopped tomato (and parsley if you have it on hand) for garnish when serving.

Variation

Add 1 cup of green peas in the last minute or two when cooking the tortellini.
