Summertime New Potato Salad
Just like the name of the dish, this new potato salad is ideal on a hot summer day.
Ingredients

cooked, cut into 1/2 inch pieces |

sweet red bell peppers

green bell peppers
chopped |

sweet yellow bell peppers

celery

red onion

chives
fresh, chopped |

parsley leaves

vegetable oil

Directions
In large bowl, combine potatoes, bell peppers, celery, red onion, chives and parsley, tossing gently to mix.
In small bowl, combine oil, vinegar, thyme, salt, pepper.
Pour dressing over potato mixture, tossing gently to combine.
Serve at room temperature.
