1 hrsThis spiced applesauce bread is a moist, warmly spiced quick bread made with a mix of all-purpose and whole wheat flour, brown sugar, and a full cup of applesauce. Cinnamon, nutmeg, and allspice give it the aroma of a fall kitchen.
Applesauce does double duty in this recipe. It adds moisture and natural sweetness while also contributing pectin, which keeps the crumb tender and prevents the loaf from drying out over the next few days. Combined with oil instead of butter, this bread stays soft at room temperature far longer than most quick breads.
The whole wheat flour adds a nuttier, heartier flavor without making the bread heavy. At just half a cup mixed with a full cup of all-purpose, it’s enough to add character without changing the texture dramatically.
Kitchen Tips
- Use unsweetened applesauce for the best balance. Sweetened applesauce plus the brown sugar will make the bread too sugary.
- Combine the wet and dry ingredients just until mixed. Quick breads toughen with overmixing.
- The loaf takes a full 60 minutes to bake. Test with a toothpick at 55 minutes. The center should come out clean with just a few moist crumbs.
- Let it cool completely in the pan before slicing. Warm quick bread crumbles when cut.
Variations
- Add chopped walnuts or pecans for crunch.
- Fold in raisins or dried cranberries for extra fruit.
- Swap the allspice for ground cloves or cardamom for a different spice profile.
