Lean ground beef and onions cook right in a microwave-safe bowl, then get mixed with cubed cream cheese, condensed mushroom soup, corn, and chopped pimentos. Everything goes into a baking dish and heats until bubbly and golden around the edges.
It’s rich, it’s cheesy, and it’s on the table in 40 minutes with minimal dishes to wash.

- Stir the meat occasionally while it browns in the microwave to break it into even crumbles.
- Cube the cream cheese small so it melts evenly throughout the casserole without leaving cold pockets.

- Add remaining ingredients to meat mixture. Pour into a shallow, 2-quart, heat-resistant, non-metallic baking dish .
- Heat, uncovered, in microwave oven 9 minutes or until sauce is bubbly.
