Smoked Turkey& Couscous Rolls

Smoked turkey slices rolled around turmeric-spiced couscous, creamy avocado and red bell pepper, brightened with lime, orange juice and fresh cilantro. A colorful make-ahead appetizer or light lunch.

30 minThese little rolls are a showstopper on any appetizer spread, and they come together faster than you’d think.
Turmeric-tinted couscous gets tossed with lime juice, fresh orange juice, jalapeno and cilantro for a filling that’s bright, zesty and just a little bit spicy.
Then each turkey slice gets loaded with a log of that golden couscous, a strip of creamy avocado and sweet red bell pepper before getting rolled tight and sliced into bite-sized pinwheels.
Make them up to eight hours ahead and keep them chilled until your guests arrive.
Chef Tips
- Let the couscous cool completely before rolling. Warm filling will wilt the turkey and turn the avocado mushy.
- Use a very sharp knife and a gentle sawing motion when cutting the rolls. Pressing down will squish the filling out.
- A squeeze of extra lime over the avocado slices before rolling helps prevent browning if you’re prepping well ahead.

In a small saucepan bring 1 cup water to a boil with 1 tablespoon oil, salt to taste, and tumeric.
Stir in the couscous, cover and let stand for 5 minutes.
St ir in the remaining 2 tablespoons oil, the lime juice, the jalapeno, the scalli on, the orange ju ice, the cilantro, salt and pepper to taste.
Allow the mixture to cool to room temperature.
Press about 2 tablespoons of the couscous mixture in the palm of o ne hand, forming a log, and arrange it across a short end of 1 turkey slice.
Ar range 1 avocado s lice and 1 pepper strip along each side of the log and roll up the couscous, av ocado, bell pepper tightly in the turkey.
With a sharp knife cut the roll into 1-inch lengths, trimming the ends.
Make rolls with the remaining turkey, cousco us mixture, avoca do and pepper strips in the same manner.
The rolls may be prepared 8 hours in a dvance and kept wrapped in plastic wrap and chilled.
