Quinoa, Blueberry and Yogurt Parfait

This breakfast parfait is made with quinoa, yogurt, fresh blueberries and toasted almonds. You can make it one day ahead, put in the fridge, and enjoy this wholesome and delicious parfait the next morning.













Low Cholesterol, Trans-fat Free, High Fiber, Low Sodium


½ cup quinoa
1 cup water
½ cup yogurt
1 ½ tablespoons maple syrup
or to taste
½ teaspoon vanilla extract
1 cup blueberries
fresh, and picked over
¼ cup almonds
sliced and toasted


Add quinoa and water into a small sauce pan.

Bring to a boil over high heat with a lid on.

Reduce heat to low to let it simmer for 15 minutes.

Turn off heat and allow to sit for another 5 minutes.

Meanwhile mix yogurt, maple syrup and vanilla extract in a small bowl until well combined. Chill in frige until ready to use.

Fluff with fork, let cool in frige or freezer until chilled.

When quinoa is chilled, start to assemble parfait.

Divide everything except almonds into 4 equal portions.

Place first portion of quinoa on bottom of parfait dishes.

Next pour first portion of yogurt over quinoa, sprinkle first portion of blueberries over yogurt.

Repeat the same steps to make second layer of quinoa, yogurt and blueberries.

Top with toasted almonds.

Chill in refrigerator for at least half an hour.

Serve and enjoy.

Note: You can use vanilla yogurt, or any fruity yogurt you like.

We like toasted almonds, you can always sprinkle some toasted walnuts, or hazelnuts.

Blueberries can be replaced by other fresh berries, such as raspberries, blackberries, or strawberries.

Had some fresh seasonal blueberries, lots of quinoa, then came out this recipe to use both of these two ingredients to make a breakfast parfait, and it actually worked deliciously well.

It was so easy to make and assemble, it looked very pretty too. I didn't chill parfait in frige because I was in hunger :) But it was still absolutely delicious, light and nutritious.

Perfect for breakfast or a refreshing dessert to finish up the meal.
