Ingredients

½ cup pecans
5 each peaches
½ cup pineapple
dried, chopped

¾ cup pineapple, fresh
fresh, chopped
*
½ teaspoon apple pie spice
*
½ teaspoon cinnamon
cup dates
soft, pitted
½ cup berries
fresh, to garnish
*
1 each pie shell (9 inch)

Directions

In a small bowl, cover pecans with water and soak for 8 to 12 hours.

Drain and rinse and set aside.

Peel and halve the peaches, reserving the skin.

Remove the pit and thinly slice the flesh.

Set aside.

In a food processor, blend peach skin with the pecans and both pineapples, spices and dates.

In the pie shell, layer half the the peach slices in a fanned spiral.

Evenly spread half the pineapple mixture over the peaches.

Repeat the process.

Garnish with fresh berries of your choice.

Serve immediately or refrigerate and serve chilled.
