Mixed Greens, Roasted Peppers and Feta Salad

 

This quick and easy to make salad is tasty and flavorful, the roasted bell peppers, white beans, and feta cheese go very well with the mixed greens, tossed with a very light vinaigrette, which gives the salad a refreshing taste.

Ingredients

8 ounces mixed salad greens
baby, well washed and dried, about 8 cups
½ each red onion
thinly sliced
1 cup roasted red bell peppers
slice into strips
16 ounces chickpeas (garbanzo beans)
1 can, raise and drain well
cup goat (chevre) cheese
crumbled, or feta cheese

3 ½ tablespoons olive oil, extra-virgin
1 x black pepper
freshly ground to taste

1 tablespoon lemon juice
or to taste, freshly squeezed

Directions

Add the mixed greens, red onion, roasted pepper, chick peas and goat cheese in a large salad bowl.

Drizzle the olive oil and freshly grind some black pepper over the salad, toss until well coated.

Squeeze some of the fresh lemon juice into the salad, toss to coat.

Season with more salt, black pepper and lemon juice to taste if needed.

Serve.
