Directions

Toss the chicken with lemon juice in a large bowl.

Cover and refrigerate for 1 hour.

Combine the following four ingredients: mayonnaise, salt, dry mustard, and curry powder in a small bowl.

Add remaining ingredients to chicken and toss lightly.

Blend in the mayonnaise mixture gently but thoroughly.

It is best served immediately, but it can be kept in the refrigerator for up to 1 day.

If you wish to make ahead, keep the dressing (mayonnaise mixture) separate until ready to serve.
