Indian Cilantro Rice with Cashew Nuts and Raisins
This flavorful Indian rice is cooked with chopped cilantro, mint, garlic, onion, cumin and raisins, there are lots of flavor on this simple rice plate, and it is an easy recipe to follow!
Ingredients

onions

cilantro
loosely packed, chopped |

mint leaves

Directions
Heat oil in a large skillet.
Add the cumin, and cook for about 2 minutes.
Stir in garlic, ginger and onions, and cook for about 5 minutes until onions are soft and start brown.
Stir in the cilantro, mint leaves, green chili peppers, raisins, and cook for 2 to 3 minutes.
Add rice and cook for another 2 to 3 minutes until well mixed.
Season with salt to taste.
Put the rice and vegetable mixture into a rice-cooker until it's done.
Before serving, top with some cashew nuts.
