Grilled Turkey and Ham Sandwiches

 

This is a very yummy sandwiches, you can use your leftover turkey or you can just do it as a deliciouos sandwiches.

Ingredients

1 tablespoon mayonnaise, light
1 teaspoon dijon mustard
8 slices white bread
or whole wheat, whole grains, 1-ounce
4 slices deli turkey
ower-salt breast, 1-ounce

4 slices deli ham
ower-salt, 1/2 ounce

4 slices cheddar cheese, reduced-fat
1/2 ounce
*
8 slices tomatoes
1/4-inch-thick
*
1 x nonstick cooking spray
*
Carrot sticks and tomato soup
1 teaspoon olive oil
2 teaspoons garlic
bottled minced
14.5 ounces tomatoes
undrained diced
14 ounces chicken broth, low salt
fat-free
1 tablespoon balsamic vinegar
½ teaspoon black pepper
1 x parsley leaves
chopped, for garnish, if desired

Directions

Combine mayonnaise and mustard in a small bowl.

Spread about 1 teaspoon mayonnaise mixture over 1 side of each of 4 bread slices.

Top each slice with 1 turkey slice, 1 ham slice, 1 cheese slice, and 2 tomato slices. Top with remaining bread slices.

Heat a large nonstick skillet over medium heat.

Coat pan with cooking spray.

Add sandwiches to pan; cook 4 minutes or until lightly browned.

Turn sandwiches over; cook 2 minutes or until cheese melts.

Carrot sticks and tomato soup:

Heat olive oil in a medium saucepan over medium-high heat.

Add minced garlic to pan, and sauté 1 minute.

Add tomatoes; chicken broth; balsamic vinegar; and black pepper.

Reduce heat, and simmer 10 minutes, stirring occasionally.

Garnish with chopped parsley, if desired.
