Ingredients

1 cup almond meal
110g, you can just out 1 cup of almonds in a food processor and grind them down very fine if you don't have almond meal

175 grams brown sugar, light
1 cup
120 grams brown rice flour
3/4 cup, or you can use sorghum flour

½ cup cocoa powder
unsweetened
1 teaspoon xanthan gum

½ teaspoon baking powder
¾ teaspoon sea salt
fine, (regular salt is fine, too)
2 large eggs
beaten
¼ cup vegetable oil
(coconut oil is nice to use, too, for more flavor)
1 teaspoon vanilla extract
1 cup zucchini
shredded, patted dry and packed
¾ cup chocolate chips
(milk or dark, whatever your fancy may be)

Directions

Preheat oven to 350?F

1). In a large bowl, mix almond meal, brown sugar, brown rice flour, cocoa powder, xanthun gum, baking powder, and salt. 2). Beat in the eggs, oil, and vanilla. Add the shredded zucchini, and chocolate chips and mix well. 3). Pour mixture into a baking pan that is either non-stick, greased, or even lined with parchment paper. 4). Bake for about 25 minutes, let cool, and then eat up!

These gluten free chocolate chip zucchini brownies look and sound delicious. Love using almond meal, which gives the brownies amazing nutty flavor; vegetable oil is another great thump up for me, a lot healthier than butter but still makes the brownies super moist and delicious.
