What is xanthan gum?
Xanthan Gum is a plant-based stablising and thickening agent.
Xanthan gum is a powerful emulsifier that can encourage liquids that don't naturally mix together to combine. It is also a powerful thickener that helps increase the viscosity (thickness) of batters and liquids that it is added to as well as increasing creaminess.
It's it especially useful making gluten-free flours as Xanthan gum acts similarly to gluten. The Xanthan gum replaces the wheat-based gluten which enables the gluten-free flours to become elastic and allow baked goods like cookies and muffins to hold together and when making gluten-free bread helds retain gas bubbles that give bread its fluffy texture.
