Popcorn Snowmen
Submitted by Cathy58
Popcorn snowmen stack three marshmallow-popcorn balls into edible snowmen decorated with gumdrop hats, fruit leather scarves, and candy buttons. A fun Christmas kid craft snack.

45 minThese aren’t just popcorn balls. They’re a project, the kind of slow-afternoon activity that keeps kids off screens and turns a Saturday in December into a memory. Popped popcorn gets tossed in melted butter and marshmallow syrup, shaped into three graduating sizes of balls (think Frosty proportions), then stacked with a quick confectioners’ sugar icing that doubles as edible glue.
Decorating is where the personalities come out. Gumdrops become top hats. Fruit leather strips tie around the middle as scarves. Mini chocolate chips press in for coal eyes and buttons. Licorice whips work for arms. Each snowman ends up with its own character, which is the whole point.
Work quickly while the popcorn is still warm. Once the marshmallow syrup cools, it stops being pliable and the balls won’t stick together. Lightly greased hands help keep the mixture from sticking to fingers. A spare bowl of warm water for rinsing hands between balls makes the process cleaner.
Kitchen Tips
- Don’t skip the butter. Butter-free marshmallow goes too hard and the popcorn balls crack instead of holding.
- Use freshly popped popcorn. Day-old popcorn absorbs syrup unevenly and yields soggy patches.
- Flatten the bottom of each big ball as you shape. Snowmen that don’t stand flat won’t stay standing for photos.
- Let the assembled snowmen set for 15 minutes before decorating. Fresh icing is too soft to hold candy.
Variations
- Use mini marshmallows in different colors for a festive pink or pastel base.
- Swap gumdrops for peppermint candies and fruit leather for rolled licorice for a more classic look.
- Add a handful of sprinkles to the popcorn mixture before shaping for hidden pops of color.
Ingredients
Directions
In a large saucepan, melt the butter over low heat.
Add the marshmallows and cook, stirring often, until melted and syrupy, about 5 minutes.
Place the popped popcorn in a large lightly greased shallow pan.
Pour the syrup over the popcorn, tossing to coat evenly.
While still warm, form 6 balls about 5 inches in diameter from the coated popcorn for the bottom sections, giving the balls flat bases so the snowmen will stand.
Form six balls about 3½ inches in diameter for the middle sections.
Then form six balls about 2 inches in diameter for the top sections.
Stir in the confectioners’ sugar and milk together until smooth.
Use the icing to stack three popcorn balls of decreasing sizes into a snowman, then attach candies to decorate. (Gumdrops for hats, fruit leather for scarves, etc.)
