The batter comes together fast with softened butter, fresh lemon zest, and basic pantry staples, then cooks in just three to four minutes in the microwave. The result is a soft, cakey bar with a bright citrus punch, topped with a simple lemon frosting.
The texture here is more like a cakey cookie than a dense lemon square. Spreading the batter evenly in the dish is a must so you don’t end up with raw spots in the center. Rotate the dish halfway through cooking for even results.
Let the bars cool completely before frosting. Warm bars will melt the frosting into a greasy slick instead of that smooth, set layer you want. Cut them small since these are rich little bites.

Ingredients
Directions
- Grease bottom only of square dish, 10 X 6 X ½ inch.
Mix margarine, sugar, milk, lemon peel and egg in medium bowl.
Stir in flour, baking powder and salt.
Spread evenly in dish.
- Microwave uncovered on high 3 to 4 minutes, rotating dish ½ turn after 2 minutes, until no longer doughy; cool.
Frost with Lemon Frosting.
Cut into about 2 X 1½ inch bars.
