Whoopie Pies recipe

Low Fat, Low Cholesterol, Trans-fat Free, High Fiber
 

Ingredients

½ cup cocoa powder
½ cup water
hot
1 ½ cups sugar
1 large eggs

½ cup sour milk
1 teaspoon vanilla extract
½ cup vegetable shortening
*
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 ¾ cups all-purpose flour
Filling
¾ cup powdered sugar
¾ cup vegetable shortening
*
6 tablespoons marshmallow cream
*
1 teaspoon vanilla extract

Directions

Mix together all cake ingredients and drop by teaspoon on cookie sheet.

Bake 15 minutes at 350℉ (180℃).

Cream together the filling ingredients and spread between 2 of the cakes.

These will freeze well.

Very nice texture to the cake. I made the filling with butter instead of shortening. I set aside a few of the cakes to make with a raspberry filling (I added 2 tsp. raspberry jam to the mixture and a tad more confectioner's sugar to thicken it up a bit). A light dusting of confectioner's sugar over the tops makes for a lovely presentation for a simple dessert. Kids love these.
