How to make broccoli beef stir fry

Choose a flank steak, top sirloin, tenderloin, the eye of round, strip-loin, or pretty much any beef sliced thinly across the grain that will work well in this recipe.

Combine all the marinade ingredients in a small bowl: the oyster sauce, rice wine vinegar, brown sugar, and cornstarch. Add the beef strips, mix thoroughly, and allow them to marinate for 30 minutes.

Combine all the broccoli seasoning ingredients into a cup: the rice wine, brown sugar, cornstarch, and water.

Heat 2 tablespoons of the peanut oil in a wok (over highest heat) or a large 12-inch (30cm) non-stick skillet over medium-high heat until nearly smoking.

Add the ginger and salt and toss for a few seconds, then add the broccoli and stir-fry for one minute. Then add 1/4 cup of water, reduce heat to medium, cover tightly, and steam until crisp-tender, about 4 minutes.

Uncover and increase heat, stir-frying until the water is evaporated. Remove broccoli and reserve.

Return the wok or pan to the heat without rinsing or wiping it out. Add the remaining 1 tablespoon of peanut and heat until nearly smoking and shimmering.

Add beef slices and stir-fry until lightly browned but not cooked through. Do not stir fry too vigorously, or the meat will not brown; it is better to press slices against the sides of the wok to sear.

Return the broccoli to the wok or skillet and toss to combine.

When hot, stir in the seasoning sauce until the sauce thickens (it's a good idea to whisk the sauce in the cup just before you hurl it into the wok).

Turn onto a platter and drizzle sesame oil over the top.

Note: The sugar in the marinade and seasoning sauce acts as a floor enhancer rather than a sweetener.
