Four ingredients stand between you and a plate of melt-in-your-mouth peanut butter balls. Creamy peanut butter, a little butter, vanilla, and powdered sugar come together into a soft, fudgy dough you simply roll and chill. No oven, no fuss.

The dough should hold together easily when you press it. If it is too sticky to roll, work in a bit more powdered sugar. Too dry and crumbly? A spoonful more peanut butter brings it back. Chilling the rolled balls firms them up, which is what lets you dip them cleanly.

From there, choose your finish. Roll them in powdered sugar, leave them plain, or dip them in melted chocolate. Dip them most of the way and leave a little circle of peanut butter peeking through the top and you have made buckeyes, the beloved Ohio holiday candy. Keep them chilled and they hold for a couple of weeks.

Kitchen Tips

  • Adjust the dough as you go: more powdered sugar if it is too sticky, more peanut butter if it is too dry.
  • Chill the rolled balls before dipping so they hold their shape in the warm chocolate.
  • For buckeyes, dip most of the ball and leave a circle of peanut butter showing on top.

Variations

  • Dip in white, milk, or dark chocolate, or drizzle a contrasting chocolate over the top.
  • Roll in crushed graham crackers, chopped peanuts, or sprinkles.
  • Use crunchy peanut butter for a little texture.
