Ingredients

¼ cup apricots
dried
*
¾ cup prunes
dried
*
¼ cup dried peaches
*
¼ cup dried pears
*
6 cups water
cold
1 each cinnamon sticks
*
2 slices lemon
*
2 tablespoons tapioca, quick-cooking
3 tablespoons sugar
2 tablespoons raisins, seedless
1 tablespoon currants
dried
1 each apples
green, pared and sliced

Directions

Wash and soak the dried fruit for 30 minutes.

Pour fruit and water into a pressure cooker.

Cover, set control at 15 and cook over heat until pressure is reached.

Reduce heat and cook for 6 minutes. Cool naturally for 5 minutes. Run under cold water. Add cinnamon, lemon and tapioca.

Heat to boiling, stirring occasionally.

Add remaining ingredients.

Simmer uncovered until fruit is tender but not mushy.

Refrigerate until chilled.

Can serve as a dessert.
