Ingredients

2 cups mushrooms
fresh, sliced
½ cup scallions, spring or green onions
finely chopped, including tops
1 tablespoon vegetable oil
3 cups brown rice
cooked in beef broth

Directions

Cook mushrooms and onions in oil until tender.

Add rice.

Toss lightly.

Heat thoroughly.
