Banana nut muffins made with walnuts and coconut oil

3 Ripe Bananas, Mashed
1/2 C Coconut Oil, Melted
1/4 C Sugar
1 Egg
1/2 TBSP Baking Powder
Walnuts
Cinnamon
Vanilla Extract

Directions

  1. Preheat oven to 375℉ (190℃).
  2. Grease muffin tin.
  3. Whisk together bananas, coconut oil, sugar, vanilla, and egg until smooth.
  4. Add the flour, baking powder, cinnamon, and salt. Stir until just combined.
  5. Fold in walnuts.
  6. Scoop into greased muffin tin, filling each about ⅔ full.
  7. Bake at 375 for 12 to 15 minutes until a toothpick comes out clean.
  8. Serve warm!
