Avocado Feta Salsa - Superbowl
Super quick and easy to put together, and the salsa tastes so refreshing and delicious. Serve it with store-bought or homemade tortilla chips.
Ingredients

italian plum (roma) tomatoes

avocados
ripe, peeled, pitted and chopped |

4 | tablespoons |
red onion
finely chopped |
|
1 | clove |
garlic
minced, or to taste |
|
1 | tablespoon |
parsley leaves
freshly snipped |
|
1 | tablespoon |
oregano
freshly chopped |
|
1 | tablespoon |
olive oil
|
|
1 | tablespoon |
white wine vinegar
red or white |
|
3 | ounces |
feta cheese
crumbled or cubed |
Directions
In a medium or large bowl, add tomatoes, avocados, onion, and garlic, gently toss to combine well.
Stir in parsley and oregano.
Drizzle olive oil and vinegar.
Add feta, and gently stir until evenly coat.
Cover, and chill for at least 2 hours, or up to 5 hours.
Serve.
