Super quick and easy to put together, and the salsa tastes so refreshing and delicious. Serve it with store-bought or homemade tortilla chips.

Ingredients

2 each italian plum (roma) tomatoes
chopped
1 each avocados
ripe, peeled, pitted and chopped
4 tablespoons red onion
finely chopped
1 clove garlic
minced, or to taste
1 tablespoon parsley leaves
freshly snipped
1 tablespoon oregano
freshly chopped
1 tablespoon olive oil
1 tablespoon white wine vinegar
red or white
3 ounces feta cheese
crumbled or cubed

Directions

In a medium or large bowl, add tomatoes, avocados, onion, and garlic, gently toss to combine well.

Stir in parsley and oregano.

Drizzle olive oil and vinegar.

Add feta, and gently stir until evenly coat.

Cover, and chill for at least 2 hours, or up to 5 hours.

Serve.

Never tried to add feta cheese into salsa, and it actually worked very well. The salty feta actually enhanced the overall flavor, and added another note to the salsa.

Served it with homemade oven baked tortilla chips. Not only good for Super Bowl, but it's also great on normal no-game days :)
