Anise Chicken for Two

A very easy and fairly quick one pot meal that's perfect when you're in a hurry. Chunks of chicken and rice seasoned with star anise and Chinese five spice powder. Yum.













Trans-fat Free


2 cups chicken broth
4 teaspoons worcestershire sauce
1 teaspoon star anise
1 teaspoon chinese five spice powder
1 cup rice
½ pound chicken tenders
½ tablespoon sesame oil


Cut chicken into 1 inch chunks, and fry in sesame oil over high heat, until no longer transparent.

Add chicken broth, Worcestershire sauce, anise, Chinese 5 spice, and rice.

Bring to a boil, and then lower heat.

Cook over medium heat until liquid is all absorbed.

Very easy and very tasty. I found the rice turned out a bit gluggy albeit very tasty. Next time I'll use my rice cooker to steam the rice along with the seasonings, season and brown the chicken then combine the seasoned rice with the browned chicken along with 1 cup of frozen peas and this would turn into a 4 or 5 star recipe. In yo're in a hurry though, this is ready in about 25 minutes as is and has lots of flavor.
