Thinly sliced sirloin steak takes on a punchy teriyaki marinade of soy sauce, beef stock, fresh garlic, ginger, and brown sugar in just two hours. The freezer trick at the start is what makes this work: a 60-minute chill firms the meat so you can shave it paper-thin against the grain, which is exactly what you want for quick-cooking broiler skewers.

Threading the strips on skewers means more surface area hits direct heat under the broiler, so you build caramelization fast without overcooking the inside. The leftover marinade gets a second life as a glaze: reduce it in a small saucepan, thicken with a cornstarch slurry if you want, and pour it over the finished skewers and rice. Nothing wasted.

Directions

Freeze meat 1 hour to firm (makes slicing easier); slice into very thin strips.

Combine remaining ingredients except rice; pour over steak. Marinate 2 hours. Thread meat on 4 skewers.

Broil about 4 inches from heat until desired doneness (5-10 minutes), brushing with marinade and turning once.

Heat remaining marinade; thicken if desired. Serve with meat and rice.
