Whole Wheat Pasta with Cilantro, Sun-Dried Tomatoes and Feta
A delicious and nutritious one-pot meal is ideal for a busy week-day dinner.
angel hair pasta
or as needed, or spaghetti, preferably whole wheat
in oil, coarsely chopped
pimento stuffed green olives
fresh, coarsely chopped
Cook the pasta according to the directions to desired consistency. Drain well.
Meanwhile In a mixing bowl, mix together sun-dried tomatoes, olive oil, feta cheese, and olives if using until well combined.
Add the cooked pasta into the mixing bowl along with cilantro.
Toss everything together until well combined.
Serve warm, at room temperature or chilled.
