Texas Straw Hats

This was a family favorite when I was growing up and became a must-have with my young sons. Zesty thick chili served over Fritos - This recipe will become a family favorite!!!
|⅔||cup||sweet red bell pepper||chopped, or yellow|
|⅔||cup||corn kernels||fresh (Optional)|
|12||ounces||tomato paste||2 cans|
|1||dash||red hot pepper sauce (eg. Tabasco)||*|
|2||teaspoons||chili powder||up to 3 tsp (or more, to taste)|
In large skillet, cook onion, celery, bell pepper and corn (if using) in oil til tender but not brown.
Add beef; brown lightly.
Add remaining ingredients except chips and cheese.
Simmer uncovered for 1 hour, stirring occasionally.
Serve over corn chips, top with grated cheese.
