For sweet potatoes

peeled, and cut into 1" cubes

For black beans

CUPS ML BLACK BEANS
up to 3 cups, drained and rinsed

TEASPOONS ML CHILI POWDER

or 1 clove minced garlic

Directions

Preheat oven to Broil.

Mix cubed sweet potatoes with olive oil, garlic, and spices. Broil the sweet potatoes on a cookie sheet until soft (20-25 minutes).

While sweet potatoes are cooking, heat drained black beans in a sauce pan over medium heat with spices.

Serve blackbeans over heaping pile of cubed sweet potatoes and top with sour cream, hot sauce, and cilantro. Can also be served in a warm corn tortilla.
