Directions

Heat the Oil

In a large pot, add olive oil and set it over medium heat.

Cook the Sausage and Onion

Add the sausage and onion to the pot. Sauté together until the sausage is browned, about 5 minutes.

Add Garlic

Stir in the garlic and sauté for an additional 1 minute.

Add Liquids and Seasonings

Pour in the water or stock. Add the salt, black pepper, basil, and pepper flakes. Stir to combine.

Bring to a Boil and Simmer

Increase the heat to bring the mixture to a boil. Once boiling, cover the pot, reduce the heat to low, and simmer for 10 minutes.

Add Vegetables and Parsley

Add the broccoli, potatoes, and parsley to the pot. Continue simmering, uncovered, until the potatoes are tender (about 10-15 minutes, depending on the size of the potato pieces).

Not bad and it was a great way to use up some old sausage I had in the bottom of my chest freezer and used frozen broccoli. I added some dried oregano and two tablespoons of tomato paste. Also used mild Italian sausage so our 6 year old daughter might like it. Indeed, she declared it kid friendly! Also, all we had were Russet potatoes - not the best choice for this type of soup - regular white or red potatoes, perhaps Yukon gold would have held their shape better. Next time!
