Directions

Preheat oven to 375℉ (190℃).

In large bowl, combine flour, sugar, baking soda, cinnamon, nutmeg and gelatin.

Stir until evenly mixed.

Make a well in center of dry ingredients.

In food processor or blender, combine egg substitute, undrained strawberries, sliced banana and oil.

Blend until smoth and creamy.

Pour fruit mixture into well and stir gently by hand until dry ingredients are moistened.

Using non-stick cooking spray, grease two 9x5 inch loaf pans.

Pour batter equally between pans.

Bake on center rack of oven 45 to 50 minutes or until inserted toothpick comes out clean.

Let cool before slicing. Makes 2 loaves.
