30 minSix ingredients and half an hour. That’s all it takes for pork chops with a sticky, sweet-savory glaze that hits every note. The chops sear in a hot skillet, then cook through over medium heat while you mix the sauce: honey, lemon juice, low-sodium soy sauce, and minced garlic.
The sauce goes into the hot pan after the chops come out. Three minutes of cooking concentrates it into a syrupy glaze that clings to the meat when you pour it over. The honey caramelizes slightly, the lemon brightens everything, and the soy adds that salty umami depth that makes you want another bite.
Getting a good sear on the chops first is what makes this work. One minute per side on medium-high heat creates a brown crust that adds flavor and texture under the glaze. Then drop the heat and let them cook through gently so they stay juicy inside.
Pro Tips
- Don’t move the chops during the initial sear. Let them sit for the full minute so a crust forms. Lifting them too early tears the surface.
- Check doneness with a thermometer. Pork loin chops are lean and go from juicy to dry quickly. Pull them at 145°F (63°C) and let them rest.
- Stir the honey mixture while it cooks in the pan. Honey burns fast, and you want a glaze, not a scorched mess.
- Let the chops rest a few minutes before pouring the sauce over so the juices redistribute.
Variations
- Add a pinch of red pepper flakes to the glaze for a sweet-heat version.
- Use bone-in chops for more flavor and a juicier result.
- Swap lemon juice for orange juice and add a dash of five-spice powder for an Asian-inspired twist.
