This garlic dijon mustard vinaigrette is very flavorful, it goes well with any kinds of mixed greens. If you prefer less garlic taste, you can always reduce garlic to taste.

Ingredients

¼ cup lemon juice
¼ cup red wine vinegar
¼ cup olive oil, extra-virgin
2 tablespoon dijon mustard
2 cloves garlic
small, minced, or more or less to taste
¼ teaspoon salt
1 x black pepper
to taste

Directions

Combine lemon juice, vinegar, oil, mustard and garlic in a blender.

Blend until smooth.

Season with salt and pepper.

(If you don't have a blender, you can combine every ingredient in a medium bowl, then whisk until well mixed.)

To keep it in an air-tight jar in the refrigerator for up to 3 days.

These is no reason not to make your own salad dressing, so easy to make and the most important part is the taste, homemade dressing is much better flavor, we made this garlic dijon dressing earlier along with the salad, very good.
