Different kinds of fresh vegetables are tossed with this flavourful vinaigrette, it goes well with any kind of main dish, or even good on its own!

1/4 cup of maple, soy sauce and mustard vinaigrette recipe, see the link below
For the vegetable salad

EACH EACH GREEN BELL PEPPERS
thinly sliced

EACH EACH SWEET RED BELL PEPPERS
thinly sliced

peeled and cut into match sticks

well washed and drained *

Directions

Mix well all the salad ingredients except mixed greens with 2 tablespoons of vinaigrette, in a medium bowl, marinated for about 5 minutes.

For assemble the salad:

Divide mixed greens evenly and arrange onto serving plates.

Divide marinated vegetable mixture evenly and place on top of each mixed greens.

Drizzle the reserved dressing on top of the each salad.

Serve.
