Vegetarian tacos without resorting to beans or meat substitutes. This filling uses rice as the base, with garlic and onions softened in cooking spray (no oil), then bulked up with stewed tomatoes, green chiles, and taco seasoning. The result is filling, flavorful, and dramatically lower in fat than traditional ground-beef tacos.

The smart move is sweating the onions and garlic in water plus cooking spray instead of oil. The minced onions release their own moisture, which combined with a splash of water effectively braises them into translucent sweetness. This trick saves serious calories without sacrificing the foundational flavor.

Six cloves of garlic might sound aggressive but it’s right for a meatless filling. Without meat fat carrying flavor, you need to lean harder into aromatics to give the dish presence. Mince fine so it distributes evenly through every spoonful.

Fold the seasoned tomato-chile mixture into the cooked rice rather than serving them separately. The rice absorbs the seasoning liquid and the whole thing becomes a unified filling rather than a salsa-on-rice situation.

Directions

Prepare rice as usual.

While rice is cooking, sauté garlic and onions in a little water and cooking spray.

When onions are slightly translucent, at chiles, and tomatoes.

Cook for 30 seconds, then add ¼ cup water and taco seasoning.

Cook for a few minutes, then add to rice. Serve with ff tortillas and your favorite taco toppings!
