Meatloaf and mashed potato roll takes the old supper standby and turns it inside out. The seasoned ground beef gets pressed flat on wax paper, then spread with creamy mashed potatoes studded with crispy bacon and sautéed mushrooms before rolling up jelly-roll style.
When it bakes, the ketchup glaze caramelizes on top while the potato filling steams the meat from the inside out, keeping it tender. Slice it crosswise and you get those gorgeous spiral rounds with a striped cross-section, no separate side dish needed.
The wax paper trick is what makes this work. Use it to lift and roll the meat without it cracking or sticking to your hands. Don’t skip sautéing the mushrooms and onions first either, raw aromatics release water mid-bake and turn the filling soggy.

Directions
Combine meat, one egg, bread crumbs and seasoning; mix well.
Place meat mixture on wax paper on a flat surface and shape into a rectangle.
Sauté the mushrooms and onions in a small amount of butter.
Mash boiled potatoes, and combine with remaining egg, crumbled bacon and mushrooms.
Spread mashed potatoes over the meat rectangle, and gently roll starting with the short end.
Place Meat Roll in a greased pan, spread with a thin layer of ketchup and bake at 350℉ (180℃) F for 1 hour.
