Yes, mayonnaise in cake. It sounds strange until you remember that mayo is just eggs, oil, and vinegar. It replaces both the eggs and the fat in this recipe, and it produces one of the moistest cakes you’ll ever pull out of the oven.

Directions

Combine the raisins, nuts, soda and hot water and allow to soak for 10 minutes.

Blend together the mayonnaise, sugar, vanilla extract, cloves and cinnamon.

Fold this mixture alternately with the raisin mixture into the flour.

Pour the batter into a greased and floured 9-inch square baking pan and bake in a preheated 350℉ (180℃) F oven for 35 to 40 minutes cake.
