Nachos is definitely one popular Mexican food, and it's a perfect appetizer for party, make this luxury nachos to start celebrating Cinco de Mayo.

Ingredients

2 each tortilla chips
in 2 colors or different flavors, such as blue corn, red corn, yellow corn, lime flavored, chili flavored or black bean chips,
*
Salsa:
4 each tomatoes
vine ripe, seeded and chopped
1 each jalapeño pepper
seeded and finely chopped
*
1 small white onion
chopped
cup cilantro
minced, or parsley
1 x salt
to taste
*
For the beef and bean topping:
1 tablespoon vegetable oil
such as olive oil, canola oil
1 pound beef, sirloin steak
4 cloves garlic
or to taste, minced
1 small onions
chopped
1 each jalapeño pepper
seeded and chopped

¾ teaspoon salt
or to taste
1 ¾ teaspoons chili powder
1 teaspoon cumin
ground, or to taste
1 teaspoon cayenne pepper sauce
or more as needed

15 ounces black beans
1 can, drained
For the cheese sauce:
2 tablespoons butter, unsalted
2 tablespoons all-purpose flour
2 cups milk
12 ounces pepper jack cheese
3/4 pounds, about 2 2/3 cups

Optional toppings:
1 x cilantro
freshly chopped
*
1 x scallions, spring or green onions
freshly chopped, both white and green parts
*
1 x black olives
chopped
*
1 x pimentos
diced
*
1 x sour cream
*
1 x avocados
cubed
*
1 x red hot pepper sauce
*

Directions

Place 2 varieties of corn chips on a large platter.

Mix together salsa ingredients in a medium bowl until well blended, and set aside to let the flavor develop.

Heat a medium nonstick skillet over medium high heat.

Stir in oil, garlic, onion and peppers to the pan and cook about 3 minutes, then stir in meat and crumble with wooden spoon.

Season with salt, chili powder, cumin and cayenne pepper sauce to taste.

Cook meat for 5 to 6 minutes, stir in beans and reduce heat to low.

In a medium sauce pot, add butter, once it melts, then stir in flour.

Cook flour and butter about 2 minutes under medium heat, whisk in milk.

Bring milk to boil, stir in cheese until smooth.

Remove cheese sauce from the heat.

Pour cheese sauce evenly over the chips and top evenly with beef, beans and salsa.

Serve right away, and pick your favorite toppings.
