Luxury Nachos

Directions
Place 2 varieties of corn chips on a large platter.
Mix together salsa ingredients in a medium bowl until well blended, and set aside to let the flavor develop.
Heat a medium nonstick skillet over medium high heat.
Stir in oil, garlic, onion and peppers to the pan and cook about 3 minutes, then stir in meat and crumble with wooden spoon.
Season with salt, chili powder, cumin and cayenne pepper sauce to taste.
Cook meat for 5 to 6 minutes, stir in beans and reduce heat to low.
In a medium sauce pot, add butter, once it melts, then stir in flour.
Cook flour and butter about 2 minutes under medium heat, whisk in milk.
Bring milk to boil, stir in cheese until smooth.
Remove cheese sauce from the heat.
Pour cheese sauce evenly over the chips and top evenly with beef, beans and salsa.
Serve right away, and pick your favorite toppings.
