25 minWhen you need brownies and you need them now, the microwave delivers. These from-scratch cocoa brownies go from mixing bowl to done in about 25 minutes, and they come out fudgy and rich, not the rubbery disaster you might expect from a microwave.
The batter is dead simple: beat sugar into oil, add eggs and vanilla, then stir in flour, cocoa, and salt until smooth. No melting butter. No tempering chocolate. The oil keeps the texture moist and the cocoa provides all the chocolate flavor. Five tablespoons of cocoa is generous, so these taste genuinely chocolatey.
Covering with wax paper after cooking and letting them stand is the step that finishes the brownies. Microwave baking doesn’t create a dry surface crust like an oven does, so the standing time lets the residual heat finish setting the center while the wax paper prevents moisture loss.
Kitchen Tips
- Use medium-high power, not full power. Full blast overcooks the edges into rubber while the center stays raw.
- Check at 8 minutes. The surface may still look slightly moist, but the brownies continue cooking during the standing time. Better to pull them slightly underdone than overdone.
- Sprinkle nuts or chocolate chips on top before cooking so they set into the surface and don’t roll off.
- These won’t brown on top like oven brownies. That’s normal. The texture and flavor are still there.
Variations
- Dust with powdered sugar after cooling to hide the paler surface.
- Swirl in a tablespoon of peanut butter on top of the batter before microwaving.
- Add a teaspoon of instant coffee to the dry ingredients for a mocha depth.

Directions
Beat sugar into oil, blend in eggs and vanilla.
Combine dry ingredients and add. Stir until smooth.
Pour batter into a greased microproof 8 X 8 X 2 inch baking dish and microwave or medium high for 8 to 10 minutes.
If desired sprinkle with nuts and or chips before cooking.
Cover with wax paper and let stand to cool.
