Jumbo Prawn Curry

This curry is a delicasy in the Indian state of Goa. It has plenty of coconut and some chilly which go very well with prawns.

TEASPOON ML GINGER PASTE *
¼ 1.3
TEASPOON ML GARLIC PASTE *

TABLESPOONS ML VEGETABLE OIL

TEASPOONS ML CURRY POWDER
½ 2.5
TEASPOON ML SALT
¼ 1.3
TEASPOON ML TAMARIND *

DASH DASH CORIANDER

Directions

Heat oil in a pan and fry the onions and red chilly until the onions are dark brown in colour

Add turmeric, ginger-garlic paste, coriander powder, curry powder, desiccated coconut, tamarind paste, salt and sauté for a few minutes you can sprinkle some water if the mixture tends to stick to the pan.

Take this off the hob and let it cool.

Blend the mixture until it forms a smooth paste.

Transfer the mixture back to the pan and heat it

Put the prawns and cook for a couple of minutes.

Pour in the coconut milk and add some chopped coriander

Let it simmer and cook for 5 to 6 minutes.

SERVE HOT preferably with rice !
