60 minNo eggs, no refined sugar, and still a deeply satisfying spice cake. Applesauce provides the moisture and binding that eggs would normally handle, while honey and the natural sweetness of raisins do the sweetening.
The moment baking soda hits the hot applesauce, the mixture foams up dramatically. That’s the leavening reaction happening in real time, and it’s what gives this dense, whole wheat cake its lift. Don’t wait around after this step. Get the batter into the pan while it’s still active.
Cinnamon, nutmeg, and cloves fill the kitchen with that warm spice-cake smell while it bakes. The whole wheat flour gives the crumb a slightly nutty, hearty character that pairs naturally with the chunky walnuts and plump raisins scattered throughout.
Pro Tips
- Warm the applesauce until genuinely hot, not just warm. The baking soda needs heat to react properly and give the cake enough rise.
- Work quickly once the soda is added. The foaming reaction loses power fast, and a slow pour means a flat, dense cake.
- Butter the pan well. Honey-based batters are stickier than sugar-based ones and cling to the sides.
- Test at 40 minutes. Whole wheat cakes can go from done to dry in just a few extra minutes.
Variations
- Top with cream cheese frosting for a dressed-up finish, or serve warm with vanilla ice cream.
- Add dried cranberries in place of raisins for a tarter, more colorful cake.
- Stir in a tablespoon of fresh grated ginger for a spicier, more complex flavor.
Ingredients
Directions
Warm applesauce over low heat.
Mix together the flour, spices, raisins, and walnuts in a mixing bowl.
Melt the butter in a small pot and mix in the honey.
Stir into the dry ingredients. Stir the baking soda into the hot applesauce. This will foam up in a spectacular fashion. Add the batter in the bowl and mix thoroughly. Pour the batter into a well buttered 9 inch square cake pan. Bake in a preheated 350℉ (180℃) oven for about 40 minutes or until a knife inserted in the center comes out clean. May serve with vanilla ice cream or cool and frost with cream cheese frosting.
