Directions

Cook zucchini and onions in half the butter with oregano and salt until tender (about 5 minutes) and most liquid evaporates.

Mix eggs, milk, cheese, bisquick, salt, and remaining melted butter in a blender.

Mix well, blending for about two minutes.

Pour into a 13-inch (33 cm) shallow casserole dish or pie plate.

Spread zucchini all over the top.

Bake for 30 to 40 minutes at 375℉ (190℃).
