Directions
Prepare smoker.
Rub mushrooms with olive oil and season with salt and pepper.
Hot smoke for 10 minutes.
Purée all sauce ingredients.
Spoon over mushrooms.
Add slices of cheese, a little more sauce and smoke for 5 more minutes.
