Slightly sweet, these potatoes go wonderfully with roast pork.

Ingredients

MEDIUM MEDIUM POTATOES
quartered, peeled, if desired

TABLESPOONS ML YELLOW ONION
diced

TABLESPOONS ML BUTTER
or margarine, melted

TABLESPOONS ML HONEY
clover or sugar free

TEASPOON ML DRY MUSTARD
I use Coleman's

PINCH PINCH BLACK PEPPER
freshly ground *

Directions

  1. Preheat oven to 375℉ (190℃). Lightly coat 11” x 7” baking dish with vegetable spray.

  2. Place potatoes in a single layer in prepared dish, top with onion.

  3. In a small bowl, combine the melted butter, honey, mustard, salt and pepper; drizzle over the potatoes and onion.

  4. Bake for 40 to 45 minutes, until fork tender, stirring halfway through cooking.
